Lunch Plenary: “Coconuts: Interwoven in Bahamian Foodways is the Jelly Coconut Salad” Presented by Chef Eldred Saunders

Food and culture are intricately linked in the Bahamian society. Bahamian cuisine is a fusion of flavourful local ingredients farmed from the land and seas of our archipelago. The preparation of these dishes includes techniques brought by other cultures that migrated to our shores.
Most of the cuisine produced today existed before colonization and was imported from countries within Africa and Europe. Perhaps the most popular food item is conch, a large marine mollusk formerly abundant throughout the islands, but now under threat from overfishing. This presentation will explore the use of coconut as a substitute ingredient to maintain the taste and texture of one of the most popular Bahamian dishes: conch salad.
